About the Department
St Vincent’s Hospital Melbourne’s kitchen is a large commercial kitchen producing approximately 2,000 meals per day. Meals are produced using a cook chill system with blast chilling and tumble chilling technology. Meals are plated on a cold plating line for the Fitzroy campus and plated in bulk for offsite locations.
 
About the Role
An exciting opportunity currently exists for a committed and responsible Trade Cook to join the Food Services team on a casual basis. The Trade Cook under the guidance of the Sous and Executive Chef is responsible to ensure all preparation and production is completed as per the production reports and standard recipes. The Trade Cook is responsible for completing correct production quantities to the required quality while maintaining food safety and OH&S compliance.
 
Duties
  • Delivers the highest standard of patient food services
  • Liaise with kitchen hand supervisor regarding issues to the cleanliness of the kitchen and equipment
  • Observe and follow correct food handling policies and procedures as documented in the Food Safety Program
  • Ensures correct hand washing techniques are used as per Food Safety Training program
  • Ensure food is stocked, prepared cooked, stored and labelled as per work schedule and as per documented time frame
Skills, Experience and Qualifications
  • Food Handling Certificate (HLTFS207B)
  • Trade Cook qualifications equivalent
  • Experience in Healthcare Industry (desirable)
  • Cook-chill production (desirable)
  • Demonstrated ability to facilitate team outcomes in a multidisciplinary environment
